This Fat Is Making A Comeback

I recently took a cooking class, and besides learning that frozen shrimp is as good as what you get at the fish store, I learned how to make tortillas, which has been on my list for years!


What struck me the most was how simple the ingredients were, and it wasn’t just the initial recipe. We’ve made several iterations for Taco Tuesday, and they all had short ingredient lists. A few contained something I didn’t have much experience with — lard.


I found that lard fell out of favor in the early 1900s when vegetable shortening was invented. You may be more familiar with the brand name of shortening, Crisco. These two products are NOT the same. However, as more and more people embrace keto diets and try to avoid hydrogenated oils, lard is slowly making a comeback.


Beyond that information, I realized I needed to know how to store the several-pound bucket of lard I bought. So I went to answer that question and seven more frequently asked questions about lard (including just what it is).
