The Cutest Back To School Treat

September can be a slog. Not just for kids going back to school but for grownups, too. The summer is over, we are tired from the long weekend, and we aren’t yet experiencing the cooler temps that make some of us love autumn.

To ease the blahs, we made a cute back-to-school treat. This snack brought a smile to everyone’s faces — wafer cookie pencils!

Here’s how to make them.

You’ll need:

Wafer Cookies

White Melting Chocolate

Chocolate Chips

Red Food Coloring

Here’s How To Make Them

  1. Line a baking sheet with parchment paper.
  2. Cut two small diagonal pieces off the sugar wafers to create the pencil point. Making even sides is easy if you use the lines on the cookie.
  3. Melt the white chocolate in a microwave. Dip the points of the cookie in the chocolate to coat.
  4. Add a chocolate chip to the end of the cookie to create the pencil point.
  5. Add a few drops of red food coloring to the white chocolate wafers BEFORE melting.
  6. Dip the tops of the sugar cookies in the pink chocolate to create the eraser.
  7. Lay the pencils on the prepared baking sheet and place them in the refrigerator to cool.
  8. Store in an air-tight container on the counter.

Some Notes:

  1. Placing food coloring in melted chocolate causes it to thicken.
  2. Do not store the cookies in the refrigerator; they will become soggy.

If you make these, let me know!

Here’s what’s cooking this week.

WEDNESDAY
Fried Fish, Mac and Cheese, Spinach

THURSDAY
Pasta with Eggplant Puree (we omit the pine nuts)

FRIDAY
Bratwurst, Onion Rings, Salad

SATURDAY

SUNDAY
